Fruit cake





I'm baking this cake at least once a week, as everyone likes it!

This cake is very doughty, moisty and you can make it with every kind of fruit you love.

I've already baked it with raspberries,  blueberries and yesterday one with blackberries. We love berries!

In a bowl mix together 250 grams all purpose flour, 100 grams white sugar, 2 eggs, the juice of half a lemon ,1 glass of fresh milk (nearly 200 ml) and half a espresso small cup of olive oil.

When the ingredients are well blended,  add baking powder and then the fruit. (I use 150 grams of fresh fruit).

Pour in a baking pan (I usually grease it with butter and flour ) and bake in preheated oven at 175 degree for 30/40 minutes.
